OPTION 1:
THE classic French TigrÉ MINI cake

French tigrés cakes are a classic and striking pastry found in pâtisseries throughout France, and they have recently experienced a resurgence there. They are rarely seen in the US! They are very soft and moist cakes, dense and rich in flavors of almond and brown butter, and studded with pieces of fine chocolate, creating a distinct look that makes them stand out — your guests will never know how easy they were for you to make. Chef Zach will show you all the tips, share their unique beginnings dating to the 17th century, and guide you step-by-step to prepare ten 2 3/4-inch individual hand-held cakes from scratch. They are a deliciously unique pastry to add to your recipe collection.

THE FAMOUS FRENCH “MI-CUIT”

The "mi-cuit au chocolat" is a to-die-for gem of French cuisine, attributed to the renowned three-star Michelin chef Michel Bras. This warm dark chocolate dessert is melting and indulgent, with a light texture and gently flowing chocolate center. It’s surprisingly easy to prepare once you know its secrets, such as how to select the best chocolate, which you’ll learn after making and enjoying two individual cakes from scratch along with a homemade crème Chantilly that you’ll use to decorate your plate as an accompaniment. This is a dessert to savor while dreaming of France!

THE BEST DARK CHOCOLATE TRUFFLE

What's a better chocolate experience than a silky, buttery dark chocolate truffle? Pretty much nothing! In this class, you'll learn professional chocolatier techniques to perfecting decadent dark chocolate truffles -- and how to kick them up a notch by enhancing them in a variety of ways with flavors of your choice. Chef Zach will share all his tips for how to make informed chocolate choices, too. You’ll make a dozen chocolate truffles from scratch, and shape and decorate them to take home.

Philippe Conticini’s DARK CHOCOLATE MOUSSE

Philippe Conticini is one of France’s most beloved award-winning pastry chefs and TV personalities. This recipe is his dark chocolate mousse: rich, decadent, and silky smooth. I translated the recipe from French and adapted it to make it very approachable for teaching you his exact methods for making the silkiest and most well-balanced dark chocolate mousse possible. The recipe has simple ingredients, but the secret is all in the easy-to-master techniques, which I’ll share with you and teach you so you can achieve the same perfect results every time.


option 5:
THE EASY AND ELEGANT MILK chocolate tartLET

In this class, you'll learn two important skills: techniques for making the perfect tart dough from scratch plus making a luscious premium milk chocolate truffle filling to fill the baked shells. Chef Zach will teach you how to work with milk chocolate specifically and introduce you to “dark” milk chocolate while showing you how to create various flavor infusions for your filling. You’ll get hands-on experience with Chef Zach to make a dozen of these bite-size 2-inch tartlets. They’ll become your go-to treat to add to your special occasion party trays.

option 6:
THE WHITE CHOCOLATE CHANTILLY MOUSSE

In this lesson, you'll learn a secret of the chocolate world that few people know: There is REAL white chocolate — and when it's good, it's very good! But how is it different from other products we identify as white chocolate? Learn the answer to this along with the how-to’s of making this creamy and sweet white chocolate crémeux-based mousse, topped with fresh berries and a berry cream — all from scratch. This one is for those who like things a little on the sweeter side.

OPTION 7:
THE CHOCOLATE ROULADE (GLUTEN-FREE)

Made from a delicious, light, and moist 7-inch chocolate sponge cake that contains no flour, butter, or oil! It’s based on a traditional European-style almond sponge method, and you’ll learn all the techniques for perfecting it as Chef Zach guides you through completing it from scratch. You’ll learn the deliciously light chocolate filling and versatile soaking syrup. The entire cake is made using only 7 ingredients, so you can whip this one up easily while making a memorable impact! (Ingredients: almond flour, granulated sugar, eggs, cream of tartar, Dutch-process cocoa powder, cream, pure vanilla extract).

OPTION 8:
THE CHOCOLATE SOUFFLÉ

Considered one of the most difficult desserts to make, but in reality it’s so easy once you know a few simple pointers that make all the difference. You’ll have the confidence to make these again and again without fail for an impressive presentation. With only six ingredients (including an excellent chocolate) and using simple equipment, a chocolate soufflé is the quintessential chocolate dessert to know.
